Pignoletto is an ancient Italian corn variety, often red or yellow. It originates from the Canavese in the Piedmont region and is used to make traditional foods like polenta and meliga di pasta (polenta biscuits). This corn has a distinctive cylinder-cone shaped cob> Pignoletto translates to small pinecone.
This is my new favorite new polenta corn, I mean right up there with Rostrato O denta cane piedmontese. I had a pretty good harvest this year, but I'm still building up my seed stock to do a large grow out so we can sell it as polenta. This yellow pignolette makes small tight ears packed with tiny kernels ( I have not tried to pop it, but I bet it pops). The cobs are 5-8” long and about 2-2.5” round. The stalks only get about 4.5’ tall and is a very short season corn, something like 75-80 days.
